Shavkapito is so rare that most people working in wine have never tasted it. It grows in the Kartli region of Georgia, away from the famous Kakheti, where the soil is limestone and the wines come out lighter and more delicate than the bold reds most people associate with Georgia. Maria Marta Salas made this one the old way: the grapes went into a clay pot, wild yeasts from the vineyard itself started the fermentation without any help, and nothing was added or taken away. The result is a red wine that is soft and elegant with raspberry, cherry and a gentle earthy quality. If you love Pinot Noir and want to drink something nobody else at the table has ever heard of, this is it.
