Šipon is the Slovenian name for Furmint and in the Haloze hills it produces something quite unlike Tokaj. This is the Roots version: spontaneous fermentation, 15 days of skin contact in 400L casks, aged in used 225L barrels, bottled unfiltered. Some sediment in the bottle is normal and expected.

The extended skin contact gives the wine a light tannic grip that adds structure and allows it to age beautifully. Herbs, white flowers and tropical fruits with a mineral depth that grows over time. A unique unfiltered wine that reflects the purity of the grape, the soil and the nature of Haloze in the glass.
